This is what I’m doing

OK!  Happy Day 22 on my healthy challenge.  This is when I need to dig deep.  I’m notorious for stickin’ to a plan for 2-3 weeks and then going back to my treats (:  I need to find another motivation.  The Memorial Day weekend doesn’t help much with a birthday to celebrate too!  I’ll keep busy and get creative with my food.

This morning was another greatest and best run up Elephant Rock!  My friends and I always say this is one of our favorite places.  We had quite the group this morning and then ran into 2 other girl power groups on the trail.  We decided to go directly to the rock, which we don’t usually do.  I wish I had better pictures of us on the rock.  They were taken way zoomed up and with bad lighting.  I couldn’t salvage them.  This is what I got!

securedownload-1 securedownload-3I think I’ll make a quilt with all my pony friend photos one day!  It even started raining half way through which made it even more perfect.  This weekend we are home working on house projects and havin’ parties.  We got a trampoline yesterday!!  It was a surprise.  Our kids are at good ages.  I’m hoping we have a great outdoors summer this year!

Alright, back to my healthy challenge!  Here are a few examples from the official checklist.

5 fruits and vegetables each day

Only two treats per week

64 oz. of water every day

45 minutes of exercise 5-6 days a week

No eating past 8:30 p.m.

We also have a few personal and spiritual points to do each day too.  I think every body is different in how it responds to nutrition and exercise.  I’m going to think of my weak areas and tighten them up.  I need to work abs more.  I gotta get in control of my bread and treat fettish.  And I need more sleep.  Sleep should really be on the list.  I really love getting up early.  This morning our run didn’t start until 6:30 a.m. and I felt like I’d slept in!  What I have to learn is to get to bed or better yet, get my kids to bed!  Here are this week’s goals:

Only two CARB servings per day.

AB workout 3 times a week

7 hours of sleep each night

I’ll end with two more photos of the day.  I don’t mention my little doggies too much in my blog, but I had to snap a photo with my Henry dog.  He got attacked by another dog in the neighborhood yesterday.  I’m so glad I didn’t see it.  The dog had him in his mouth by the scruff of his neck and was whippin’ him around like a doll.  My poor doggie.  I was able to give him some ibuprofen in some cheese today.  He’s hurting.  My sister will be giving me a call on this one.  She LOVES dogs!  Then, my daughter and I were laughing at our hair this morning.  She got my hair.  This is it!  Curly underneath and frizzy straight on top.  Lovely!

Have a spectacular and healthy weekend!

Will run for waffles

My besties!

This photo op is becoming a tradition!  We were lucky today to get another trail run in.  We ran our usual Elephant Rock run and then continued up the trail through a place called Rudy’s Flat.  In all my running, I’ve never ran past Elephant Rock.  It was BEAUTIFUL of course.  I rank trail running as my number one workout of choice!  Here is the view overlooking my beloved city!

I enjoy the variety, scenery, quietness, and company of running trails.  It was so pretty when the sun made it over the mountain and the light filtered through the trees.  Some of the leaves were starting to change too.  I told my friends we had to do this run several more times before the change of weather.  It was about 11 miles.  Here are a few more pics.

You can see why we have so much fun.  It’s non stop talking and laughing!

That being said, today is FOOD day and I invented a WAFFLE recipe.  I was envisioning it on my run and so that’s what I made for breakfast.  It was DELISH!

So cute, huh?

I took a basic family waffle recipe I’ve had for years, and changed it to make it HEALTHY!!!  It’s so easy to do.  Here is the ORIGINAL recipe:

3 eggs, separated

1/2 c. oil

2 c. buttermilk

2 c. flour

1 T. sugar

2 t. baking powder

1 t. baking soda

1 tsp salt

Here is the changed up and WAY more YUMMIER and HEALTHIER waffle recipe 🙂  I ❤ WAFFLES!!

3 Eggs, separated

(I’m not afraid of eggs.  If you are, you can replace two egg whites for one egg)

1/4 oil

1/2 applesauce

1 3/4 c. skim milk or almond milk

1 c. oat flour (blend oats in the blender)

1 c. spelt or whole wheat flour

1 scoop vanilla protein powder

2 t. baking powder

1 t. baking soda

1/2 t salt

Mix egg yolks, oil, and milk with a handheld mixer.  Add dry ingredients and mix well.

Beat egg whites with mixer until foamy.  Add to batter and mix in lightly.

Cook in a waffle iron and top with fruit.

I am also not afraid of a little butter and “bad for you” syrup.  I use very little and I don’t need it, it tastes just as yummy to me!!

I can’t believe it’s FRIDAY!  We had to get our run in today because tomorrow will be a day of FOOTBALL games!  Tis the season.  We’ll be at 3 tomorrow!  Fun time of year.  Here is a quote from WICKED for the day.  I think I’m very much a reverse psychology kind of person.  I told my husband my goal to be 129 and he told me I couldn’t do it if I ate apples and my Zone bar.  O.K.  that was all I needed to hear.  I have 3 pounds to go in one week.  BRING IT!

“I’m through accepting limits, ’cause someone says they’re so.  Some things I cannot change but till I try, I’ll never know!
