While we were in NICE, France my friend had us search the town for a special cookie I’d never heard of, a MACARON. They come in many flavors and are so pretty as you can see in the picture above!!! My very, very favorite was SEA SALT CARAMEL. I also liked COCONUT!! I cannot begin to describe how DELICIOUS these cookies are. I WILL for sure attempt to make these myself! Here is a good recipe I found on this BLOG: The Macaron Queen. They were VERY pricey, but we didn’t really care. We ended up going back for more. I’ve never seen these in the states and I’m thinking I need to open up my own little shop!!! They would easily beat an fancy pants CUPCAKE out there!!! Here we are in front of the store.
I really liked NICE. I want to go back and explore a lot more of FRANCE. We walked the streets in the early morning and meandered by the most beautiful open market with fresh flowers, fruits, vegetables, and pastries. I wanted to take pictures of everything!! I was nicknamed the Japanese of the group with all the pictures I took!! Check out a few of these:
It was so perfectly warm and beautiful. We walked over to the beach and hiked up a trail that over looks the city and the ocean.
So my FOOD comment for the day is to FIND a macaron store and SAMPLE a few!! I’ll make these as soon as possible. I doubt they coincide well with my diet!! Maybe that will be part of my REWARD around Oct. 20th!! So WORTH IT!!!
Today is also my SWEET, SWEET Mommy’s birthday!! I was looking through some old pictures and found this one I’d never seen before.
This explains why I’m such a good GARDENER!!! What it really means to me is that my Mom always included me in everything she did. She made me feel like she couldn’t get things done without me. She’s the most calm and kind person I know. I only know of one time she ever got mad at me in my WHOLE life!!!
